Eggs this week!  My hens are now laying about a dozen and a half eggs per day – and I’ve been working hard to collect them and keep the nesting boxes clean!  The hens have been dining on a twice weekly “salad bar” of fresh kitchen scraps – not only does the quality and flavor of the eggs benefit, but the chickens are great little composters, eating the scraps they like and making a nice load of manure that gets scratched around with straw and wood shavings on the coop floor.


We also have beautiful baby arugula this week, which has benefited from the warm day temperatures and cool night temperatures lately.  This arugula crop is really nice and spicy!
